Obtained after a traditional process of blanching in salt water followed by careful drying, it develops notes that are at once tangy, earthy, and an irresistible concentrate of umami flavor.
- How to use them in cooking?
- Whole or pierced: Prick them with the tip of a knife and add them to your slow-cooked dishes (chicken, veal, tagines, soups, sauces) so they release their aroma throughout the cooking process.
- Broken or ground: Reduced to powder or crushed, they instantly enhance fish and marinades.
